[cooking] They said it couldn't be done...

"They" were wrong. (Actually, the jury is still out on that.) ristin wanted to double the slow cooker recipe Chunky Vegetable Chilli. As the vegetables piled in it was looking to me less likely that it would all fit. As you'll see from the photos we have made it--just--by scooping from the sides to the middle to take advantage of the curvature of the lid. Ristin is calling this a double win, but as you'll see from the recipe we still have to find room for zucchini and red capsicum. We're hoping the ingredients already in there will reduce as they cook. We have nine hours to go yet.

I reckon that's going to reduce as it cooks for sure. You'll be right.

Ah, no problem. ^_^ That'll reduce down fine. The water loss'll make all the space you need, and the tomatoes themselves'll cooperate by squishing in. Admittedly, it might be simpler to shift the tomato balance from fresh/tinned toward purée, purely to save space, by virtue of that aspect having then been performed already, but a "from scratch" approach leaves open the freedom to use heirloom tomatoes, or ones grown at home.

FWIW, I just made rather a nice chicken & oyster sauce, with the magic ingredient being a few teaspoons of preserved Chinese mustard (as in the plant, not just the seed) with chili - really opened a new level of flavor in the dish. Not hot as such, but then, that wasn't what I was aiming for - for heat, I'll go with bird's eye or naga chilies, or some fun blend of heat, like Dave's Insanity. =:9

I would love to have you cook for me some time. :) Puréed tomatoes might work, as we already eschew the step where we drain the tinned tomatoes (it's hard for us to imagine how we could do that successfully).

Let us know how it'll work out in the end. :) It does sound very nice so far! I wish I had a (decent) slow cooker.
